Fue parte de la primera promoci\u00f3n de egresados del M\u00e1ster de Calidad y Seguridad de los alimentos de la ULL, y trabajo en la Universidad de Extremadura, durante tres a\u00f1os, con una beca de investigaci\u00f3n posdoctoral.<\/p>\n<p style=\"text-align: justify\">Es investigadora del Grupo Integrado de Ciencia y Tecnolog\u00eda de los alimentos, donde contribuye en la l\u00ednea de investigaci\u00f3n en Bromatolog\u00eda, cuyo objetivo es la analizar la composici\u00f3n de nutrientes y de compuestos bioactivos (antioxidantes) presentes en los alimentos canarios para revalorizarlos y destacar los beneficios del consumo de productos locales, frente a los alimentos for\u00e1neos. Ha participado en diversos proyectos nacionales y locales para la caracterizaci\u00f3n de tomates, aguacates, batatas, trigo, papas antiguas, jud\u00edas, chayotas, cebollas, peras, higo picos, frutillas de Magallanes, algas, etc. Adem\u00e1s de analizar la composici\u00f3n qu\u00edmica de otros alimentos de origen animal como quesos y larvas de pulpos.<\/p>\n<p style=\"text-align: justify\">Resultado de su investigaci\u00f3n son 27 art\u00edculos de impacto, 14 cap\u00edtulos de libro, 3 art\u00edculos de divulgaci\u00f3n, m\u00e1s de 40 contribuciones a congresos y la participaci\u00f3n como investigadora en proyectos competitivos y convenios con las administraciones p\u00fablicas (13). En la actualidad es investigadora en un proyecto de investigaci\u00f3n sobre optimizaci\u00f3n del cultivo de paralarvas de pulpo com\u00fan (Octopus vulgaris) en Canarias a trav\u00e9s del estudio de la microbiota y la mejora de la alimentaci\u00f3n y nutrici\u00f3n (OCTOBACT).<\/p>\n<p style=\"text-align: justify\">Es profesora contratada doctora del \u00e1rea de Nutrici\u00f3n y Bromatolog\u00eda del Departamento de Ingenier\u00eda Qu\u00edmica y Tecnolog\u00eda Farmac\u00e9utica de la ULL, donde imparte docencia en el Grado en Farmacia, Grado en Nutrici\u00f3n Humana y Diet\u00e9tica, Master en Calidad y Seguridad de los alimentos, Master en Investigaci\u00f3n y Diagn\u00f3stico de Enfermedades Tropicales, y en el Titulo propio Gastronom\u00eda y Alimentaci\u00f3n.<\/p>\n<p>[\/vc_column_text][vc_custom_heading text=\u00bb<strong>Departamento<\/strong>\u00bb font_container=\u00bbtag:h4|text_align:left|color:%23535968&#8243;
