Giant fennel is an endemic herb of the Canary Islands, belonging to the celery family and with a very wide ecological range, growing from the coast to the base of Mount Teide on the island of Tenerife. During the summer months, it remains underground. Its flowering stalks can grow to over 3 meters in height. Its leaves have a petiole that clasps the stem, are dark green, large, and highly divided, and can exceed one meter in height. Its flowers are numerous and arranged in showy, yellow, umbrella-shaped terminal inflorescences.
