Sustainable agriculture and food security in Macaronesia: Research on the benefits and risks of consuming plant products for consumer health and development of hazard minimization strategies (PERVEMAC 2)

This study assesses the risk posed by the ingestion of adverse compounds—silent hazards—that may be present in vegetables consumed daily in the Region, identifying those hazards that contribute most significantly to the overall risk. Consequently, we develop strategies aimed at minimizing these hazards in the short, medium, and long term. These strategies target two areas: firstly, food production within a framework of sustainable agriculture, with training programs for farmers; and secondly, consumers, with outreach and education initiatives promoting a healthy diet based on increased fruit and vegetable consumption, aimed at younger generations to cultivate future consumers who are more discerning about food safety and sustainable agriculture.
