This seminar explores the links between food, nutrition, culture, and heritage in the Ibero-American context. From an interdisciplinary perspective, it will address topics such as traditional knowledge about food as part of the cultural heritage of communities, the nutritional challenges faced by populations in urban and rural areas of the Canary Islands and Ibero-America, and the role of gastronomic tourism in transforming eating habits and ensuring the balance of this activity. Furthermore, it will explore strategies for promoting sustainable food systems that respect cultural diversity, reduce environmental impact, and contribute to collective well-being.
